		<description>[...] Turns out, the dry rocky terrain of the foothills is great for growing olive trees which thrive in these conditions and love the heat of the summer months.  It was the Spanish Missionaries who first brought olive trees to California and its fitting that since our region is knows for producing some of the best Spanish varietals of grapes we should be producing the best varietal of Olive Oils.   One of the largest Olive Oil producers in the area is Marisolio Olive Oil Company started eleven years ago by Mary Lou Schuster, a retired Spanish teacher.   Today, the 43 acre RANCHO MARISOL, in Copperopolis, boasts nearly 4,000 olive trees producing Italian, Spanish and Greek varietals.   Marisolio produces three LOCAL varietals.  The California Arbequina Private Reserve Extra Virgin Olive Oil is made from olives harvested within the last 90 days.   Marisolio characterize this oil as &#8220;fresh, fruity, mild, light and buttery smooth with a delicate pepper finish.  This is the Cadillac of Olive Oils, a gorgeous oil for cold applications, such as drizzled over fresh fish, greens, in dressings or as a simply, flavorful dip for bread.  This one does it all!&#8221;  California Frantoio-Leccino Extra Virgin Olive Oil is also sourced from Marisol Estate just outside of Copperopolis and this is a &#8220;medium to bold intensity oil.  Grown organically, this olive oil is green, grassy and herbaceous with a moderate pepper tone and bite. It finishes cleanly and is a perfect varietal blend typical of the Italian tradition.&#8221;  The third LOCAL varietal is the Sierra Nevada Extra Virgin Olive Oil grown just outside of Valley Springs.  Marisolio describes this oil as &#8220;herbaceous with notes of artichoke, moderate bitterness and a bold peppery finish.&#8221;  Marisolio offers an informative tasting room and bar and their products range from the Wild Mushroom and Sage Olive Oil,  Blood Orange infused Extra Virgin Oil to Truffle Oils, Almond and delicate Walnut oils.  Not to be missed is their extensive offering of flavored vinegars.  Barrel Aged Pinot Noir Vinegar and Blackberry Ginger are just a few of my favorites!  Mary Lou and her company pride themselves on being Farmers First and they work with other small farms to source only the finest ingredients.  All of their products are made naturally with &#8220;honesty, pure flavor and in the traditional way.&#8221;  Marisolio tasting room is located in Murphys and is open daily.  Click here for location!
