Drought in Italy: For two years now, Italy has been suffering the effects of global warming which has greatly affected the Trebbiano grapes—precisely the ones used in the production of our balsamic condimentos. Production of the grapes is down which creates scarcity. Ergo, prices have had an upward spiral. Our balsamic condimentos come to us in 22 pound cubes. Depending on the size of the bottles filled, a cube holds enough to fill 13 to 50 bottles. While prices have been very stable and have not changed in years, our price from our distributor recently increased $7.00-9.00/cube. As a result, unfortunately, we have had to raise the prices of our balsamic condimentos. However, we have tried to keep the increase to a minimum. Thank you for your understanding.

During the months of August and September, we have 4 all-new Cooking Classes we think you’ll find especially timely and interesting. See our EVENTS page for details.

REMINDER: In hot weather, keep your olive oils in a cool, dark (not refrigerated) place, which will promote longer shelf life.

The Murphys Mustard Company is a local business, making its own delicious types of mustards to the delight of all the locals and anyone else who appreciates great tasting mustards. Their Foothill's Fire Mustard uses Marisolio's Serrano Honey Vinegar as one of its ingredients. We've included two of their recipes in the recipe section, but check out their website for more of them at murphysmustard.com.

Roy's Seasonings is a small company in Murphys featuring natural blends of various herbs and spices to enhance the foods of your choice. Their blends use little or no salt and have no artificial ingredients. With their seasonings you will get pure, bold taste with no fillers, no color enhancers. What sets Roy's blends apart is that he uses an Italian herb base. His Poco Picante, shown here, adds the zip to his Crispy Chicken Recipe featured in the recipe section.

The Spice Tin is a most interesting store to visit on your next visit to downtown Murphys, The delicious smells of the spices can be detected in the air a block away. It has sooooo many fragrant and pungent olfactory delights awaiting you. Spices from all over the world can be found here, so there's no excuse for not finding your special, hard-to-find spice to perk up your next delicious recipe. Their website is thespicetin.com.

Since we celebrate jumping frogs at our county fair, it's only right that we feature frogs on our list of "fare time" specialties. You can have them anytime at Hillbillies Restaurant located on Hwy. 4 at the turn-off entrance to Murphys, CA. They're delish! Check out their menu on Facebook. Scroll down and click on Hillbillies Favorites and you'll find the Frog Legs.

Marisolio Tasting Bar, the sponsor of this newsletter, began with an olive orchard dream. After developing the 4000 tree ranch, learning how olive oil was made, producing four different varietals with her own label, owner Mary Lou Schuster decided it was time to market her oil along with other varietals and balsamic vinegars in a retail setting. The dream began in 2000 with 43 acres of bare land. Then 8+ years ago the retail store in Murphys, CA opened its doors. It now boasts an average of 33 olive oils, varietals and delicious infused varieties. An equal amount of balsamic condimentos, both dark and white, grace the shelves waiting for customers to taste their deliciousness. Take the virtual tour when you reach the website at marisolio.com.

If you find yourself in Murphys this summer, please visit our local shops and let them know you heard about them from us. And if you aren't close enough to travel to our area, Murphys Mustard, Roy's Seasonings, The Spice Tin and Marisolio Tasting Bar all have an online presence and do online orders.

New Oils now on the shelves: The Nocellara, which is on sale this month, is a coveted variety native to Sicily! It has a lovely, distinct fruity aroma and floral hints. Pungent and spicy with slight, fleeting bitterness. This oil has middle notes of creamy green almond, artichoke as well as confectionary notes. A perfect choice for those that crave a little bite and fruitiness in one. The Biancolilla, also from Sicily, has lingering pungency and very little bitterness. This creamy oil has vegetal notes of artichoke and savory of herbs. A complex example of this olive variety.

Rubbing it In….In case you don’t have the time or inclination to make the rubs featured in this month’s recipes, we have lots of awesome already-prepared rubs for lamb, chicken, pork, beef and fish in our store. Just pop on in and make barbecuing a breeze.

New Oils:
We have recently ordered three new Italian varietal olive oils to add to our wonderful array of international oils:
Ogliarola – Mild Intensity
Nocellara – Robust Intensity
Biancolilla – Medium Intensity.
As soon as we have them on the shelves, we will send out a special short blast to all of you so you can be among the first to taste these wonderful new oils.

Virtual Tour
For those of you who have never been able to personally visit our store, we have a special treat for you in the near future. We’re subscribing to Google’s Virtual Tour program which will take you through our front doors and into the shop. You’ll be able to see how our oils are stored in stainless steel fustis and the balsamics in ceramic crocks. A quick stop at our Pasta Corner will show you the beautiful artisan pastas that will ignite “pastability” ideas. Shelves laden with jarred olives, books, and linens will scream “olives” everywhere you look. Then, front and center, you will see the kitchen demo area with a large screen for audience viewing—-just like on the Food Network shows! We use that space for our popular cooking classes. After viewing the store you’ll definitely want to make it a must-see to visit us, either virtually or in person if you’re in the area. Along with letting you know when the new oils are ready for purchase, we’ll let you know when the Virtual Tour goes active and we’ll tell you how to access it. Stay tuned.

And now the best news for today, March 1st, it looks like we’re going to have a dandy of a storm, bringing snow and rain to the foothills. Finally we’re getting some winter!

NEWS

This month we’re featuring our wonderful Olivella® skin care products, made from 100% Virgin Olive Oil. The legendary stories of olive oil for skin care are timeless with their origins dating back to early Greek and Roman civilizations. Olivella®’s skin care products are of the highest quality and contain anti-aging benefits and natural antioxidants (Vitamins A and E). They moisturize the skin, are hypoallergenic, have a soothing effect on the skin and leave no oily residue. During the month of December, when you buy 2 Olivella® products at the regular price, you may purchase a 3rd product of the same or lesser value for 50% off, while supplies last.

Did you realize that buying our “Collection” series of oils and balsamics can save a lot of money year round. The price of our Collections is always 10% less than buying the individual bottles by themselves. The collections make wonderful gifts, either as a group for one friend, or split up into an oil and balsamic for each of two friends, or an oil or balsamic for four individual friends. You don’t have to wait for a sale. The “Collections” are always on sale. Find a collection with your favorite flavors and SAVE all year long!

Don’t forget to look online for other gifts, too, such as our cookbook, Olive our Best, for those who don’t have a clue how to cook with olive oil. Another idea is our very popular 6-Pack Sampler featuring this winter’s best buys.

Our Cooking Classes resume in February. The first of the “new season” classes will cover Bone Soups and be taught by Bambi Porter aka Gypsy Cowgirl. The latest ideas in soup making come together with some “down home” comfort food for these cold, chilly days ahead of us. Watch for all the details in our January Newsletter.

Among old favorites on sale this month, Marisolio is also featuring its newest olive oil: Olive Wood Smoked Olive Oil. Savory notes of smoky olive wood are infused with the highest quality, fresh extra virgin olive oil to make our Olive Wood Smoked Olive Oil. Our smoked olive oil is all natural with no artificial ingredients, preservatives or refined carrier oils. The flavor of olive wood smoked is close to that of oak wood smoked. In Andalusia, Spain, oil wood is commonly used for grilling fish, poultry, meats, and vegetables. Use in potato salad, marinades, over poultry, in sauces such as BBQ, brushed on grilled meats, with vegetables and even pasta. Pairs well with Lemon White Balsamic, Pomegranate Balsamic, and Neapolitan Herb Dark Balsamic.

Camp Marisolio was a huge success. The cooking preparations were boisterous and loud, the floors were sticky, and fun was had by all. Here are some darling photos taken during the camp session.
