During the summer, our neighbor, Ironstone Winery, hosts a series of concerts which add much excitement to the city of Murphys. Many attendees of the Ironstone Concerts are also regular customers of Marisolio Tasting Bar. Check out the concert series here for dates and time. For the entire month of May, we’ll be giving a 15% discount on two of our special Balsamic Condimentos. The Espresso Balsamic discount is being given, because every recipe mentioned in the newsletter uses it. If you’ll be making several or all of the recipes, we thought you’d appreciate the discount. The other discount is to introduce you to our wonderful new Cascadian White Raspberry Balsamic. Rachel Bradley, R&D Director at Veronica Foods, our distributor, has once again come up with a recipe using this newest balsamic. It will “wow” your next visitors.
2″ long zest of lime peel
1 fluid oz. Cascadian White Raspberry Balsamic
2 fluid oz. rum
2 fluid oz. club soda (no sodium)
Muddle mint leaves, lime peel, raspberries, and balsamic together in a shaker. Fill the shaker with ice and add the rum; cover and shake until chilled. Pour entire contents of shaker into a Collins glass and top with club soda.

Marisolio will be hosting two wonderful classes in the month of April. “Lamb it Up” will feature 3 different lamb dishes and several wonderful Middle Eastern side dishes. Jennie Baxter will be the guest chef for the day. Have you ever wished you could make your own sushi? Our Maki Sushi class will give you the opportunity. This hands on class, taught by Mona Klein, will teach you the art of making maki and temaki style sushi. Join us for the fun!
Coming up in May there will be an exciting class featuring Kenyan cooking and it will be followed two weeks later for a wonderful BBQ class to get you ready for the summer. There’s always something cooking at Marisolio.

We are happy to announce the arrival of a new hybrid olive oil in our store. It’s called Ultra Premium Chiquitita (Cheeki tee ta) Extra Virgin Olive Oil. This new variety comes from two cultivars noted for high productivity and oil content: Arbequina, originally from the Catalonia region of Spain, and Picual, from Andalucía in Spain’s southern region. This Chiquitita is a first olive cultivar developed by a cooperative breeding program carried out by the University of Cordoba and the Institute of Agricultural and Fishery Research and Training (IFAPA). The oil we have in the store comes from trees from this breeding program that were planted in Portugal. The oil is very tasty, unusual, mild, and an all-around great EVOO. Come in and taste for yourself.
Thanks for your patience and understanding as we await the arrival of the fall 2016 crop oil from Tunisia: Fused Baklouti Green Chili Olive Oil. This is a fresh pack product, crafted only once a year during the Northern Hemisphere Harvest in Tunisia. Bakluti is the name of a fiercely hot chili that is crushed with the olives when they are being processed, resulting in a very hot fused, but oh so flavorful, oil. It is on its way, as of this writing.
For you Chemlali lovers, we’re closing out the past fall’s amount we purchased. You’ll have to wait another 9 months before we get our next supply. If you come in this month, it is on sale with a 10% discounted price.

Marisolio Tasting Bar will be open that weekend, but the staff will be attending the show on a staggered basis.

The Don Carlo, otherwise known as "The Don" is a rare Italian hybrid that displays notes of tart green apple, bitter herb, cut grass, and herbaceous pine with aromas of green apple and sour grass. This oil has the highest phenol count (556 ppm) of all our oils making it very robust in intensity!
The Arbosana EVOOis a medium intensity oil that is floral and fruity. Flavor notes are layered and include green almond, banana and citrus.
The Frantoio/Leccino EVOO is also a medium intensity oil that displays malty characteristics, a creamy mouth feel and a sweet finish. Flavor notes include green apple, cut crass, wild flower and savory herbs. It has very little bitterness and is recommended for everyone's pantry.

For the second consecutive Olympic Games, the olive oils and balsamic condimentos from our supplier, Veronica Foods, were selected by the official US Caterer to be used in feeding our athletes and international press. Our products were incorporated into thousands of daily meals in several different locations.
The olive oils and balsamic vinegars that the Veronica Foods procured and created were perfectly paired with the fresh organic ingredients Chef Crisafulli's team purchased locally to make healthy meals for the athletes.
Crisafulli selected over 30 oils and vinegars to be featured in various dishes and to be used as dressings and said of his choice "what makes these products so special are the many years this family (Veronica Foods) has partnered with olive oil producers all over the world, ensuring they produce according to their criteria to extract the maximum health benefits and taste from the olives. Procuring all over the world allows them to follow the season and to constantly sell very fresh oils."
This month we're featuring our newest oil to the store: Fused Fennel Olive Oil. Roberta, our manager, swears that a combination of Fused Fennel Olive Oil and Lemongrass Mint White Balsamic Condimento makes the tastiest vinaigrette possible. Come on in and try it for yourself. The following is the descriptor for this new product: "Made from fresh fennel and early harvest certified organic Chemlali olives crushed together using 100% mechanical cold extraction methods. This fused olive oil is redolent with deep, rich notes of fennel that compliment a wide array of culinary applications. Fennel is paired with poultry, seafood, salads. It makes a lovely accompaniment to pork and dressings. Used widely in Mediterranean cuisine! Mind blowing with steamed mussels, bouillabaisse in aioli, with eggs, and roasted vegetables. A few new changes around the store: Mary Trotter has been appointed Assistant Manager or Marisolio Tasting Bar. You all must know that she is terrific with customers and goes above and beyond to please everyone – including me! Mary has been with Marisolio since the Fall of 2010. In additions, she heads up our cooking class program.
The latest addition to the staff is Catherine Bolton who is a real dynamo. With her computer skills, very willing and winning personality, she's a perfect "fit" with our current staff. In addition to working on the floor, she will be doing our blog and handling advertisements. With her computer expertise she has accomplished our longtime goal of getting the overhead projections at the store up and running. Welcome aboard, Catherine!
Christmas in August! Every year at this time we call the upcoming holidays to your attention. As crazy as it sounds, we know, and so do you, that it is time to start thinking ahead to the upcoming gift-giving season. Our 6 Bottle Sample Packs, especially the cute green boxes with cut out windows, always make a nice gift. Of course, we still have our standard shipping gift packs of 6×60 ml bottles that mail very conveniently. Our discounted monthly oils and vinegars that appear in each newsletter are super ideas. Wait ’til you taste this one! Marisolio just received a new Portuguese Olive Oil called Galega, the dominant olive variety in Portugal. This early harvest example is delicate, creamy and viscous with notes of apple peel, strawberry and almond. It is slightly pungent, with mild to medium intensity. Come on in and try it! It will be great for your summer salads and marinades.

We have never had such a grand entrance of product into the store as our new line of pickled olives from Spain. They are quite the hit! In last month’s newsletter, Marisolio promised to donate 5% of April’s earnings to aid reforestation efforts in the recently ravaged Butte Fire area of Calaveras County. Thanks to all of you, we are able to announce that Marisolio, at the time of this writing, will be purchasing 4146 trees from the U.S. Forestry Service, who, in turn, will distribute them to individual homeowners whose properties were burned. They will be delivered in the fall, when there is a better chance of a guaranteed water source to help the trees survive.
For all our faithful customers who joined us in this worthy cause by purchasing during the month of April, a very special thanks for your partnership in our efforts to restore Calaveras County to its former beauty.
May 5 is Cinco de Mayo. We have several HOT OILS to complement that special marinade for fajitas or tri-tip recipes. April 29th is Arbor Day. Marisolio plans to donate 5% of our month's earnings to aid reforestation efforts in the recently fire-ravaged areas of Calaveras County. We invite you to visit our store or our online site during April so that you can participate in this very worthwhile effort to revitalize the Butte Fire area. I know I'll never live long enough to see the successful regrowth of such a beautiful forested area, but we have wonderful memories of what it used to look like and feel compelled to help begin the process of re-birth to our County.
"Taste of Calaveras" has a new venue this year at Ironstone Vineyards on April 16th. The idea behind this festival is the showcasing of the county's diverse products, food, art, wines, and restaurants. Marisolio will be there, offering some special tastes featuring our renowned oils and balsamics.

Marisolio has had an eventful year: another year of drought, a scare from the Butte fire, which, thankfully was stopped before it reached the town of Murphys, the aftermath of the fire for all merchants in Murphys as people didn’t want to visit because of the smoke, and a Rancho Marisolio harvest which didn’t quite meet expectations. But there was lots to be grateful for, too. Our loyal customers continued to support our efforts all year, our staff has developed into a great team, the new cooking class format seems to be working well, and Marisolio, despite some setbacks came through the year OK.

BUTTE FIRE WRAP UP
As of this writing, 9/29/15, the Butte Fire in California which devastated 70,868 acres is now 97% contained. Total wrap up is expected by October 1, 2015, the day this newsletter goes out to all of you. In all, 475 residences were demolished, 343 outbuildings and 42 other structures were damaged. This non-profit community service agency is open weekdays 9-5 and bins are onsite for weekend drop-offs. Food items must be non-perishable and please, no glass jars: pasta, brown rice, cereal (oatmeal), canned fruit, canned vegetables, canned meat, peanut butter, soup, canned tomato products. This agency has also opened a Recovery Center in San Andreas, right on the corner of Main Street and Hwy 49. They are collecting camping equipment, towels, t-shirts, etc. You can call them at 209-754-1300.

Olive Harvest is upon us! We're still not sure exactly when it will be, as this has been a most unusual growing year. Originally scheduled for November 5, 6, 7th, it may have to be bumped up 1-2 weeks. In that event the dates would be October 22- 24 or October 29-31.

Our newest balsamic condimentos, Neapolitan Herb and Gravenstein Apple are still going strong in the store. They have been a big hit ever since they were introduced. Rachel Bradbury’s Neapolitan Herb Balsamic Marinated and Grilled Eggplant showcases the former condimento and it is also on sale this month.

Coming this week (most likely Thursday) are two new Balsamic Condimentos: Gravenstein Apple White Balsamic and Neapolitan Herb Dark Balsamic Condimento. The Gravenstein apple is an incredibly hard to find varietal due to the difficulty farmers have cultivating it. In addition to contending with a very finicky tree, it's also not an apple that travels or stores well, so it is best enjoyed during its relatively short season and isn't typically shipped far. Beginning with Flag Day and continuing through the month of July, or until we run out of product, we'll be featuring a new patriotic red, white, and blue pasta called Star-Spangled Banner Gemelli. Of this popular kitchen staple, Faye Levy, well-known food columnist, cookbook author and cooking teacher, said "No one is indifferent to garlic. People either love it or hate it, but most good cooks seem to belong to the first group."
California is the largest producer of garlic in the United States, followed by Nevada and Oregon. The value of U.S. garlic production in 2013 was $232,000,000. Globally, China is by far the largest producer, providing 2/3rds of the world’s total of 40 billion pounds of garlic in 2012. China, India, and South Korea are the top three leaders in garlic production and the United States ranks eighth in the world.
Garlic was introduced into the U.S. in the 1700’s, but its popularity did not begin to increase until the 1920’s due to the large immigration of garlic-loving ethnicities. Garlic is thought to have originated in the regions of central Asia and historically was used for medicinal purposes. Today garlic is valued more for its flavoring and use in a wide variety of foods, although it is a widely recognized health enhancing supplement. Garlic promotes the well-being of the heart and immune systems with antioxidant properties that help maintain healthy blood circulation. One of the most potent health benefits includes the ability to enhance the body’s immune cell activity.
Garlic is often referred to as the "stinking rose." The term "stinking" is fairly obvious, but nobody really knows how it got the "rose" terminology attached to it. It is actually part of the lily family, as are onions and chives. The only explanation that makes sense is that, if turned upside down, the cloves, when slightly separated, could resemble a rose. San Francisco has a wonderful restaurant called "The Stinking Rose" which makes every dish on their menu with garlic. They even serve garlic ice cream. Located in the Italian section of the city on Columbus Street, it is a unique place and every garlic lover should experience it at least once.
Marisolio sells a wonderful California Garlic Olive Oil which can be substituted in most recipes for garlic and it pairs beautifully with oregano balsamic, the citrus balsamics (lemon white, tangerine, blood orange), raspberry, black cherry, traditional aged 18 years balsamic, fig and lavender balsamics. NEW OIL: Marisolio's newest arrival is Harissa Olive Oil. Most popular in North Africa and the Middle East, Harissa is made with chili peppers (often smoked), garlic, caraway, coriander and cumin. The mixture is then pounded into a paste and left to develop the flavors overnight. By popular demand, our distributor, Veronica Foods has added even more peppers, making this the hottest infused oil in our store. SLIGHT PRICE INCREASE:The majority of our Fused/Infused Oils and Balsamic Condimentos, dark and white, have maintained the same prices since Marisolio opened its doors on March 24, 2010. Due to increased prices for the natural flavorings used in our oils and condimentos, a slight increase in those prices has been passed on to us by our supplier. We will hold off on the increase until Thursday, February 19th. We will absorb the added price increase until that date. This will give you plenty of time to make your purchases of needed items at the old price before the increase takes effect. Stock up now by shopping online or in the store.

We will be releasing newly pressed (olio nuovo) Rancho Marisol olive oils beginning early January. These four varieties, California Kalamata, Frantoio, Arbequina and Leccino are grown and produced right here in Calaveras County at Mary Lou Schuster’s olive ranch. We have a very limited supply of these extraordinary oils, so get them while they last! Fortunately, in spite of drought conditions, these oils have extremely high polyphenol counts. In a recent letter from Veronica Foods, to whom we sell our oils and who have their oils tested, the high polyphenol counts of our oils were described in this way: “As we suspected, the polyphenols are extraordinarily high at 596, 557, 338 and 668! Very few oils in the world contain such considerable amounts. Enjoy!” Congratulations, Mary Lou!
There are still some delivery delays at the Port of Oakland, but we expect to receive a delivery of Picual and Hojiblanca olive oils from the very best producers of Spain next week. A beautiful Portuguese Cobrancosa will also be delivered at the same time. Look for them to hit our shelves and website soon.

HARVEST TIME AT RANCHO MARISOL: Beginning November 6, we will be harvesting olives at the ranch. If you're in the neighborhood, drop by 4420 Hunt Road in Copperopolis and watch the hand picking process. It will take 3-4 days to pick all 4000 trees. Four of the varieties we sell in the store come from our ranch!

Nov. 1: El Día de los Muertos (Day of the Dead) Save the date! The 5th Anniversary of Murphys Day of the Dead celebration will be bigger and better than ever. Businesses will feature decorated tables commemorating the death of famous people, friends and family. This memorial-day-like celebration is a happy event with face paintings, authentic Mexican food in the Park from noon to 7:30 PM, margaritas, beer, churros, Mexican artists and artisans demonstrating their wares at the Gardens, children's activities in the park, a program beginning at 4 PM featuring Mexican Folkloric Dancers, a story teller, a Rondalla musical group, Catrina/Catrin competition, nighttime procession to the "Cemetery" where the Mayan/Aztec historical ceremonies will be featured. Mexican hot chocolate and Day of the Dead bread (Pan de Muerto) will be offered.

Welcome to our two new cooking class chefs: Dede Moreno and Aubrey Hanshaw. After an extensive search, we believe we have found THE best candidates for our new season of cooking classes, beginning next week.
Dede Moreno currently teaches Nutrition in the Columbia College Culinary Program and is an avid cook extraordinaire! Aubrey Hanshaw does catering and has worked locally at Sarafina's Italian kitchen, Sequoia Woods Country Club and Tallahan's Café.
Both ladies are passionate about cooking, are extremely well-prepared to teach and have a desire to share our products through exotic culinary adventures.
New to the store are some easy-to-make dips that only require the addition of olive oil to the dry ingredients to make some of the best dips you've ever tasted. Great for the upcoming holidays or whenever you have company. These will make your entertaining so much easier. Buy several and try them with your different oils.
NEW BALSAMIC CONDIMENTOS: By Saturday of this week, Marisolio will have 3 new balsamic condimentos on the shelves to tempt you: Coconut, Oregano, and Lavender.
Coconut White Balsamic is wonderfully sweet and pleasingly tart, with the natural flavor of coconut. Wonderful over pineapple, mango, papaya or berries, it also makes a great marinade for seafood or chicken. Pair it with Persian Lime Olive Oil or Lemon Olive Oil for a wonderful salad dressing.

This month we celebrate the German Festival of Oktoberfest. This 16-day celebration has been going on for more than 200 years. It is a time to celebrate harvest end, first new wines, strong beer, dancing, singing, traditional German food, pretty girls in Dirndls, men in Lederhosen and the traditional hunter’s hat.
During the month of October, Marisolio is featuring German recipes, a Sausage Making Class (see Recipe Section) and just before Halloween, we will hold a Spooky Tuesday Cooking Class featuring ghoulish sweet and savory treats and appetizers to add fright to any Halloween gathering. November 2nd, Marisolio, as well as most other Murphy merchants will participate in the festivities of Dia de los Muertes (Day of the Dead). This is becoming an annual feature in Murphys and is an enjoyable day of free food samples, all-day music and an evening procession to St. Patrick’s Cemetery, culminating in Mexican hot chocolate and pan de muerto (Dead Bread) for all participants.
Also next month, Marisolio will add an additional cooking class during the month to make a total of 3 wonderful and informative classes: Curry Madness (Indian Cooking) Gluten Free Cooking (for those of you must eat gluten-free food) and Practice for the Big Day (tips to make your Thanksgiving Dinner preparations stress free)

May will be a bit calmer than our two previous months. The highlights of this month will be our wonderful Fondue Class on May 7th, showcasing an entire meal built from fondues, and our Vietnamese Cooking class on May 21st given by Annie Henrichs, our guest instructor from Modesto Junior College, who will show us the tricks to making fresh spring rolls and the sauces that accompany them. Within the next few months we will be featuring our new frozen pasta line. In addition to the dry artisan pasta that we’ve been featuring for almost a year, we’ll be offering fantastic ravioli, tortellini, tortolloni, gnocchi, various pestos and sauces, as well.
Our mission at Marisolio Tasting Bar is not only to offer you the freshest oils in the world but also to share with you information about how olive oil is produced, how to taste olive oil, the chemistry of olive oil, and what to look for when buying olive oils. In the near future, two new monitors in the store will be streaming this information to you.

Marisolio Tasting Bar is adding a new cooking demonstration kitchen this month so we can bring you more exciting cooking classes year-round. During the construction, the store will be closed and online orders cannot be fulfilled, because all the crocks and fustis will be wrapped and sealed to avoid contamination from the dust that goes along with any renovation. As soon as the project is finished, you will be notified by newsletter if you are on our mailing list (see upper right corner of this page) and we will post the re-opening dates on this website.

The Harvest is Finished at Rancho Marisol Olive Ranch
“Olive” Our Harvest Facts
- During harvest, we employ 30-40 persons to pick the olives from the trees daily. Mexican states represented by the labor crew: Puebla, Zacatecas, Oaxaca, Michoacan, Guerrero, Sinaloa, Jalisco, Chiapas. Other countries represented: El Salvador, Pakistan.
- “Olive” our olives are hand-picked. No machinery is used.
- We harvest four varieties of olives: Leccino, Frantoio (Italian), Kalamata (Greek), Arbequina (Spanish)
- There are almost 4000 trees at the ranch; approximately 1000 of each variety.
- Harvested olives are dumped into busboy trays (Charolas) from picking buckets by the workers.
- Each “charola” has a number on it. When filled, the worker places his punch card in the try.
- Ranch workers pick up the “charolas” and place them in the ATV trailer and tractor-driven utility trailer
- The ATV transports the charolas to weigh-in location, where per/individual charola weights are recorded by the ranch. Then the labor contractor punches a card for each recorded charola meeting the minimum weight standard of 30 pounds. Usually the ATV can haul 24 filled charolas at a time to the weigh-in location. The utility trailer can haul 90+ charolas.
- There are approximately 4300 olives in a 30 pound charola.
- It takes 30-32 charolas to fill a waiting bin on a long trailer. Within a few hours they are transported to the olive mill for crushing.
- A filled bin is “guesstimated” to hold 140,000 olives.
- Every day during harvest, we transport 4-6 tons of olives to the mill.
- At the mill, the olive bins are removed from the trailer by the forklift, dumped into a hopper, and washed. Then by conveyor belt, they are transported into the malaxer.
- The malaxer crushes everything—- skin. pits, and olive flesh—-into a purplish paste for approximately 50-55 minutes.
- The paste is then transported by pumps into a centrifuge where, by high speed spinning, water and solids are removed and the remainder is OLIO NUOVO. Delicious, great oil!!

The pumpkin has become an important part of many holidays and traditions in North America: Halloween, Harvest Festivals, and Thanksgiving. Celebrating the importance of the pumpkin in our lives, Marisolio would like to share some interesting recipes using pumpkins and some of our oils and vinegars. We’ve all heard of sweet potato fries. Well, these are very similar but made with pumpkin. They can be prepared with different tastes, depending on whether you like things savory or sweet. Try them both ways. You’ll love them.
When the days and evenings turn cold, there’s nothing like a hot soup to warm the body and soul. This pumpkin garlic soup will take the chill out of your life and fill you with warm thoughts of the holidays ahead. It’s a little labor-intensive but so worth the work. And it will fill your home with a lovely aroma while it cooks.

Celebrate Hispanic Heritage Month
By presidential proclamation in 1989, the celebration of Hispanic Heritage Month—-September 15th to October 15th—-honors the accomplishments of all individuals and ethnic groups speaking romance languages living in the United States, who have roots in the Iberian Peninsula, North America, Central America, South America and the Caribbean. Some important dates:
Felices Fiestas Patrias: Honors the independence of five Latin American countries from Spain on September 15th: Costa Rica, El Salvador, Guatemala, Honduras and Nicaragua. In addition, Mexico achieved independence September 16, Chile on September 18, and Belize on September 21.
Founding of California: September 28, 1542. Juan Rodriguez Cabrillo (a Portuguese navigator) discovered San Diego Bay and claimed it for Spain. Cabrillo was the first European to land on the west coast of what is now the United States. The Cabrillo Festival is celebrated each year in the San Diego area.
El Dia de la Raza: (Columbus Day) October 12. Celebrates the “blending of the Spanish colonizers withnative, indigenous persons of the New World.
LAST CALL FOR “CUBA AND ITS SPANISH ROOTS.” In keeping with our Hispanic theme, our Cuban Cooking class will be offered this Tuesday, September 18, 2012 at both 10:00 AM and 6:00 PM. As of this writing there are only a couple of seats left for each class. This class is going to be special!! Coming in October: TORTILLA AND TAMALE MAKING 101. Mary Schuster, owner of Marisolio, and Nino Solorio, our newest employee, are giving a “hands-on” demo next month, featuring the making of delicious olive oil tortillas, chicken tamales, chili-cheese tamales, and for dessert, sweet tamales. This will be your chance to get in on the action. Do not wear fancy clothes and please come with clean hands! You will be taking home a dozen self-made tamales, ready to cook for dinner or to freeze for your Holiday Fiestas! Class will be held October 16, 2012 at both 10:00 AM and 6:00 PM. The fee for this very special class is $30. Fee includes the following:

NATIONAL PEACH AND CATFISH MONTH
In addition, Congress declared August as National Catfish Month in the late 80’s to recognize the contributions that the United States catfish industry has made to the economy. Alabama, Arkansas, Louisiana and Mississippi produce the majority of the nation’s catfish. This is the month to eat lots of catfish. Try our Healthy Seared Cajun Catfish with Citrus Avocado Salsa for a special treat one of these nights.
AUGUST HIGHLIGHTS AND UNIQUE WAYS TO CELEBRATE
Celebrate this day by trying our Balsamic Watermelon Cubes, made with our own Blueberry Balsamic Condimento. You won’t believe how refreshing these are. New in our store this month is the informative book EXTRA VIRGINITY:THE SUBLIME AND SCANDALOUS WORLD OF OLIVE OIL. Written by Tom Mueller, the recognized expert in the field of olive oil, it is an in-depth study of the olive oil business in this country. It exposes the many practices employed by less than honest olive oil brokers and gives tips on how to find and select genuine, good-quality olive oils. Marisolio’s supplier, Veronica Foods, is touted as one of the few ethical suppliers of olive oils. It’s an interesting and educational read for people who want to know more about the olive oil industry.
