- 2 large garlic cloves
- 1-1/2 avocados
- 2 cups fresh basil
- 1/2 cup sunflower seeds (shelled)
- 1/2 cup any Ultra Premium Manzanillo or Arbosana Extra Virgin Olive Oil
- 2 Tablespoons lemon juice
- salt to taste
- pepper to taste
- Put all ingredients in a food processor and pulse until smooth.
- Use as you would any other pesto (over pasta, with cooked vegetables, as a dip for tortilla chips or as a spread for sandwiches). If you will serve it with pasta, consider adding chopped red bell pepper to the mixture.
