  • 4 oz. chopped tomatoes
  • 1 Tablespoon Chipotle Olive Oil
  • 2 Tablespoons Pinot Noir Wine Vinegar
  • 4 oz. diced chiles
  • 4 oz. chopped olives
  • 4 oz. chopped scallions


  • Mix all ingredients together. Allow to stand a few hours. Serve with tortilla chips or pita crackers.
