  • 1 pkg. vanilla instant pudding (small size)
  • 1 yellow cake mix
  • 4 beaten eggs
  • 1 cup Jerez Wein (sherry)
  • 3/4 cup mild olive oil such as Arbequina, Hojiblanca, Chemlali or Cobrancosa
  • 1 teaspoon nutmeg
  • Powdered sugar (optional)


  • Heat oven to 350 degrees.
  • Beat all ingredients slowly with an electric mixer until thoroughly blended.
  • Pour ingredients into sprayed Bundt or tube pan.
  • Bake for 50 minutes at 350 degrees. When cake is cooled, sprinkle top with powdered sugar, if desired.
