- 1 pkg. vanilla instant pudding (small size)
- 1 yellow cake mix
- 4 beaten eggs
- 1 cup Jerez Wein (sherry)
- 3/4 cup mild olive oil such as Arbequina, Hojiblanca, Chemlali or Cobrancosa
- 1 teaspoon nutmeg
- Powdered sugar (optional)
- Heat oven to 350 degrees.
- Beat all ingredients slowly with an electric mixer until thoroughly blended.
- Pour ingredients into sprayed Bundt or tube pan.
- Bake for 50 minutes at 350 degrees. When cake is cooled, sprinkle top with powdered sugar, if desired.
