Roasted Potatoes with Rosemary Olive Oil

  • 1.5 lbs of potatoes
  • 1 Tbsp Rosemary Infused Olive Oil
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • Freshly cracked pepper
  • Handful of fresh parsley, chopped (optional)


  1. Preheat oven to 400 degrees. Wash the potatoes well, then cut them into 3/4 inch cubes (or pieces - your choice) making sure they are evenly sized
  2. Put the potatoes into a large bowl and add the Rosemary Infused Olive Oil, minced garlic, dried rosemary, salt, and some freshly cracked black pepper to taste and stir together. Toss the potatoes until they are evenly coated in the olive oil and spices mixture
  3. On a baking sheet, spread the potatoes out in a single layer. Place in the oven and roast for 15 minutes, stir the potatoes and roast for an additional 15 minutes
  4. After the initial 30 minute roasting time, stir the potatoes again and if additional browning is needed, roast for another 5 to 10 minutes.
  5. Garnish with fresh chopped parsley or fresh rosemary sprigs if desired
