  • 3 Tbsp freshly squeezed lemon juice
  • 2 - 3 Tbsp freshly squeezed lime juice
  • 2 tsp Umeboshi Plum Balsamic
  • 1 pinch of salt (or more to taste)
  • 1/2 cup Athinolia Extra Virgin Olive Oil
  • Drizzle of Toasted Sesame Oil (optional)


  1. In a bowl, whisk juices, Umeboshi Plum Balsamic and salt together.
  2. Add the oils in a thin stream, whisking until incorporated. Sample and adjust seasoning to taste.
