Zucchini Noodles with Fig Balsamic Vinegar

  • 12 cherry tomatoes halved or 2 regular tomatoes quartered.
  • 2 medium to large-sized zucchinis
  • 1 cucumber, peel and deseeded, cut into 1/2 moons
  • 12 fresh basil leaves
  • 1/4 cup Wild Mushroom & Sage Infused Olive Oil
  • 1/4 cup aged Fig Balsamic Vinegar Condimento
  • Fresh cracked pepper and sea salt to taste
  • Crumbled goat cheese to sprinkle over before serving


  1. Whisk Wild Mushroom & Sage Infused olive oil and Aged Fig Balsamic Condimento along with the salt and pepper and set aside.
  2. Use a vegetable peeler or spiralizer to create curly zucchini noodles ("zoodles").
  3. Mix together all other ingredients with the vinaigrette and let sit for 30 minutes at room temperature before serving.
