- 12 cherry tomatoes halved or 2 regular tomatoes quartered.
- 2 medium to large-sized zucchinis
- 1 cucumber, peel and deseeded, cut into 1/2 moons
- 12 fresh basil leaves
- 1/4 cup Wild Mushroom & Sage Infused Olive Oil
- 1/4 cup aged Fig Balsamic Vinegar Condimento
- Fresh cracked pepper and sea salt to taste
- Crumbled goat cheese to sprinkle over before serving
- Whisk Wild Mushroom & Sage Infused olive oil and Aged Fig Balsamic Condimento along with the salt and pepper and set aside.
- Use a vegetable peeler or spiralizer to create curly zucchini noodles ("zoodles").
- Mix together all other ingredients with the vinaigrette and let sit for 30 minutes at room temperature before serving.
